They do this because the riper an olive is, the more oil it gives.

MILLED WITHIN 4 HOURS OF HARVESTING

(Milling is the process by which oil is extracted from the olives)

The less time that passes from when an olive is harvested to when it is crushed, the better.

Because when an olive is harvested it begins to oxidize. The more time that passes between harvesting and milling, the more the olives oxidize.

The more they oxidize, the more they lose nutritional properties (becoming less healthy) and organoleptic properties (becoming more rancid and bland).

There is one problem, however.

Most extra virgin olive oil producers, do not own an oil mill (because having their own mill costs a lot of money).

So.

Once the olives are harvested, they have to take them to someone else's mill. And here is the second problem.

Other olive growers who do not have their own mills also take them there to be pressed.

Therefore, there is a waiting list.

The result of all this is that the olives are milled, at best, 24-72 hours after harvest.

Which is an eternity!

These are days when the olives remain crowded together, bruising each other.

Fortunately, we at Olio Reale not only have olive groves in which to make olives...

But we also have our own oil mill.

Then all our olives are milled within 4 hours of harvest.

Which is very little!

And this is one of the reasons why our oil is also appreciated by real connoisseurs of extra virgin.

But he is not the only one! In fact.

And the reason is simple.

I enemies of oil are three: light, oxygen and heat.
