In our Presila is about to begin the time of the Olive Harvest for the production of our REAL OIL, ours is a hilly area, so this leads to a delayed harvest compared to the sea areas, which means ,a lower acidity of the final product.
To maintain a significantly higher-than-average product quality we use tricks.
OLIO REALE is produced only by extracting the olive from the tree before its biological cycle has been completed, which in keeping with tradition is done with "combs" or "cogliolive" that drop the drupe onto nets or parachutes placed on the ground.
The olives are then stored in low (20/30 cm) wooden or plastic crates, which are stored one on top of the other in cool, well-ventilated rooms, sheltered from wind, frost and away from unpleasant odors, passing to the milling stage in the Frantoio within a maximum of 3 to 4 hours after harvesting.
